Cheesy Zucchini and Tomato Bake

I'm not sure about all of you, but summer time makes me want squash. All of the squash please!!! But, I find myself stuck in the same recipes time and time again. I needed something different. Something light, but something with a little body to it. Thus, this cheesy zucchini and tomato bake was born!


The first thing you'll be needing will be a baking dish. You're favorite will work! I used a 15.4 x 10.5 x 2 nonstick pan. The zucchini creates enough water that you should not have to grease the pan.


The oven should be preheated to 350 degrees. While the oven preheats, slice the vegetables. I sliced my zucchini long ways in half and then sliced each half in thin pieces. I used cherry tomatoes, slicing those in half.


Throw all the vegetables into your baking dish. Then it is time to make the cheese sauce. I used a mixture of Italian shredded cheese and Colby jack. Eyeballing the amount of cheese is the best. If you like less cheese leave some out. If you like super cheesy dishes, add more. I mixed the cheese, 3 eggs, and a splash of milk in a mixing bowl till combined. I added salt, onion powder, garlic powder, black pepper, and parsley. You can add whatever your favorite spices are!


The mixture should be poured over the vegetables in the dish. Taking a spatula, I tossed the vegetables around in the cheese mixture. If you're in to food photography, this is the time to take that before picture. The dish gets thrown into the oven on 350 degrees for around 25 to 30 minutes. After that, the temperature gets bumped up to 400 degrees till the cheese is a golden brown.


And that's all there is to it! Super quick and easy, perfect for those nights you come home late from work. I paired mine with fried potatoes and bell peppers, but this dish can go with anything or by itself!

 


Cheesy Zucchini and Tomato Bake

Creamy cheese sauce with baked zucchini and tomatoes. Pair with your favorites for a yummy summer dinner.


Ingredients:

4 med Zucchini

1 pint Cherry tomatoes

1 cup Milk

3 large Eggs

2 cups Cheese

Cherry tomatoes

Milk

Eggs

cheese

Directions:

Preheat the oven to 350.

Slice the zucchini and tomatoes and place them in a baking dish.

Combine the milk, eggs and cheese along with any seasonings you wish.

Pour the cheese mixture over the vegetables, tossing together lightly.

Pop the dish into the oven for 25-30 minutes.

Up the temperature to 400. Once the cheese is golden, enjoy!
