Summer is leaving. This year has been crazy for everyone, but maybe as fall rolls in it’s a chance for comfort.
Fall and winter are my favorite times of the year. I love the food, the smells, the holidays, back to school shopping..etc.
One of my favorite fall foods are casseroles!
This chicken casserole is something my mom has made for years! I may have tweaked it a little, but it’s a fan favorite still.
I used 4 large chicken breast, boiled and shredded.
Those paired with a can of cream of chicken and a tub of sour cream give you the creamy goodness that is chicken casserole.
Mix everything up and throw into a baking dish. Top with crushed Ritz crackers covered in melted butter.
Then bake! That’s it. This dish comes together fairly quickly for such a wholesome meal.

Stir Everything up and pour into a baking dish. *I seasoned with complete seasoning and garlic powder** Crush crackers and add melted butter. Stir cracker mixture until soft, top casserole with this.
