It’s the week before vacation and I have been lazy about grocery shopping! Trying to save as much as I can, we have reached the bare bottom of the pantry.
This past week has seemed a little gloomy compared to the week before. So, when it came to cooking I wanted comfort food!
Before COVID I was attempting to go back to being gluten free. Due to the lack of gluten free options available in the grocery stores right now, that hasn’t happened too much.
However, I did score a few pounds of gluten free elbow noodles! Now, this recipe can be made WITHOUT gluten free noodles. You can, as I have done a million times, use regular noodles. It doesn’t change or hurt the flavor at all!
The first thing I do is cook my pasta. If you are using gluten free pasta keep in mind that it does cook a little differently and will seem harder when fully cooked than regular pasta.
With the gluten free pasta, it seems to release a LOT more starch when cooked. So, I try to rinse with cold water thoroughly
to remove most of that.
Then I add 1 family sized can of cream of mushroom soup. I mix that up with the noodles and add 2 cans of tuna. Once everything is mixed together I like to add a little bit of my favorite cheese.
This is such a quick and wholesome meal. My mom made it for me as a kid, and now I am sharing it with all of you. I hope you all enjoy it and Keep Cooking !

Homemade Tuna Helper
1lb of elbow noodles
16oz of cream of mushroom soup
2 cans of chunk tuna in water
Directions:
Cook your pasta to desired tenderness. Drain and add back to pan. Stir in cream of mushroom soup and tuna.
*I seasoned mine with minced onion/garlic, salt, pepper and parsley.
