This week has been insane !!! From going back to work full time after being off for the last 2 months, to not making it home till 6-6:30 every night. It’s been ROUGH.
I am here to tell you, the kitchen has not been used. Only one dinner was made this week. Which is a far cry from the usual 4-5. Once I get home after working a 9hr shift in the doctors office, all I want to do is lay down and sleep.
Friday nights are always late nights. We stay up, maybe hang out with a few friends, catch a movie...typical Friday night vibes. i took this as my chance to make dinner at least once this week. So I made a cheesy chicken and broccoli casserole.
This recipe is so so easy, it only takes a few minutes to prep. First, you need a bunch of broccoli. It’s the MAIN ingredient. This will all get thrown into your favorite casserole dish.
Then, you need riced cauliflower. I used frozen, steamable riced cauliflower. Microwaved it and then squeezed out all excess water. The cauliflower gets added to the dish with the broccoli.
Then, I added 2 cans of chicken breast into a mixing bowl. Adding a family size can of cream of mushroom soup, a tblsp of minced garlic, 2 cups of shredded Colby jack cheese, and some salt and pepper to the bowl as well. This all gets mixed together and poured over the broccoli and cauliflower. Then I added about 2 cups of shredded cheddar cheese to the top and popped it into the oven to bake for an hour and a half.
It was comforting yet was still healthy. And crowd pleasing !
Cheesy Chicken and Broccoli Casserole
26oz cream of mushroom soup
1tblsp of minced garlic
2cups of shredded colby jack cheese
salt
pepper
2 cups shredded cheddar cheese
12oz canned chicken
20oz broccoli
2 10oz bags of riced cauliflower
Preheat your oven to 350. Place the broccoli into a casserole dish. Follow the directions on the bag to cook cauliflower. Then dump contents into paper towels and squeeze the water out of it. Put the cauliflower in the pan with the broccoli; spreading it evenly across the pan. In a separate mixing bowl, mix the remaining ingredients except the cheddar cheese. Only drain one can of chicken, add the juice from the other one into the sauce. Pour sauce over broccoli and cauliflower. Top with the cheddar cheese. Throw into the oven to bake for 1hr and a half.
