Tacos are one of my personal favorites. In a shell, bowl, bag... anyway you fix it. You can add in a ton of different ingredients to change up the flavors.
For this recipe I changed up things a bit. I started off with cubes chicken breast. I fried the chicken in a little butter with taco seasoning.
Once the chicken was cooked, I added in a can of rotell and a can of drained black beans.
I stirred everything together and kept on low heat. While the chicken mixture was keeping warm, I heated up nacho cheese. Once the nacho cheese was heated, I removed the chicken mixture from stove.
I filled a bowl full of the chicken mixture. Then I added the nacho cheese on top, and added a dollop of sour cream.
This was a quick and easy meal that left you feeling full. I hope this recipe is as big of a hit as it was with us!
